The stock/broth is made using 'Bouquet Garni' or a Spice Potli. Yakhni is a simple stock or broth made with whole spices and sometimes an addition of onions and garlic.

  1. In a pot add cumin seeds cloves whole black pepper black cardamom and onion now cook till onion turn brown now add ginger garlic paste and chicken
  2. Then add potatoes and tomatoes in it and add all spices
  3. Now cook till chicken tender then cook completely so the oil comes out from edges of all the mixture now add 3 glass of water and green chillies
  4. Add soaked rice in it and cook till water disappear then close the lid and switch flame to very low for another 5 mins and the rice are ready

The dish is basically called "Yakhni Pulao" or just Pulao. Yakhni is Urdu word for broth. Mutton, beef or chicken pieces are boiled with onion, ginger, garlic and whole garam masala till meat is tender and this duration of cooking and water medium extract maximum flavor and aroma out of meat and spices.
