To be safe, I just use a thermometer to measure your chicken's temp.

- Preheat oven to 180° Mix the washed, unpeeled halved potatoes, the halved onions and with the garlic that has its outer dry layer of peel removed and that has been cut in half across. Add the rosemary, tarragon,cumin salt and pepper. Add the oil, mix again until everything is coated well. All is placed into a ovenproof deep baking tray or large pie dish.
- Wash, pat dry chicken bits, season with salt and pepper, arrange over the potato mix.
- Bake for 45 minutes completly undisturbed
- Then baste the chicken legs with runny honey, bake for a further10 minutes
- Bake until golden brown. As chicken, leeks and bacon go well together I served it with creamed leeks and bacon, sweet carrots and the potato mix.
