- RICE: Then, add the rice and mix well. Then add the remaining szechuan pickles and mix well. Taste the fried rice; if it isn't too salty then add just 1 tsp light soy sauce and mix well.
- ASSEMBLY; Now add in the chixken and the egg and mix well. Turn off the heat. Serve and garnish with spring onions.
