- preheat oven to 350°F
- melt butter in a large cast iron skillet set to medium high heat.
- chop onion and add to the skillet
- after onions are loose, place whole garlic cloves and the leaves of one twig of rosemary and stir around

- leave it alone for about an hour, periodically checking on it
- when chicken has a deep, golden brown skin atop it, remove it from the oven. plate it, it can be served immediately
