Although I've tried Marmite dishes before at the zhi char stall but prior to this, I seriously wasn't quite sure of what's Marmite at all.

The ingredients needed to make Marmite Chicken:
  1. Take Chicken thigh / wings
  2. Get Marinate ingredients A
  3. Take Corn starch / Potato starch
  4. Get 1/2 tsp Salt and pepper
  5. Get 1 tsp brown sugar
  6. Get 1 tbsp soy sauce
  7. Take 2 beaten egg
  8. Take Sauce ingredients B
  9. Make ready 1 1/2 tbsp Marmite
  10. Make ready 1 tbsp Maltose (in hot water)
  11. Make ready 1 tbsp Worcestershire sauce
  12. Get 2 tsp brown sugar
  13. Get 1 tbsp dark soy sauce
  14. Make ready 1 tsp sesame oil
  15. Take 3 cloves garlic

Do not add more than required as it has a strong flavour. Return pre-fried chicken to the wok and toss until well coated with the sauce. These marmite chicken wings have a sticky, beautiful glaze with a deep marmite flavour. Add Marmite, honey, maltose, shrimp paste with hot water in a small bowl.

Steps to make Marmite Chicken:
  1. Marinate chicken with ingredients A for 1 hour.
  2. Deep fry marinated chicken in medium hot oil until golden brown and crispy skin.
  3. Stir fry garlic till aroma and add sauce ingredients B, and add 1/2 cup water. Stir sauce until boil and thicken, then add back fried chicken.
  4. Turn off heat and stir for a few seconds to let sauce coat the chicken. Garnish with sesame seeds if you have and decorate with coriander and serve.

Using the same wok, add in chopped garlic and marmite water mixture, stir and cook till big bubbles, add in fried chicken, stir. Mix well all over chicken pieces. Heat oil, add in chicken pieces to brown. When it is browned on one side, flip to the other side to brown. Put in fried chicken and mix well.
