About These Mango Habanero Chicken Wings. Spicy chicken wings are a family favorite thanks to a funny story from when I was living in San Ramón, Costa Rica. None of my friends, including my now-husband Ricardo, had ever visited the States. Mango Habanero Wings are sweet and spicy chicken wings, with a Mango Habanero glaze made with Mango Habanero Salsa and peach preserves, that are baked in the oven instead of fried.
Instructions to make Mango Habanero chicken wings:
- If necessary, wash and/or thaw chicken wings and set aside.
- Remove the mango pulp by making two parallel cuts along the mango seed. Then peel the mango and the pulp comes off easily. Cut into smaller cubes.
- Blend all ingredients together, except for the Chicken Wings, in a blender. Adjust salt as necessary, depending on sweetness of the mango. Next, choose a cooking method from below.
- Method 1: Marinate wings in sauce by placing 1/2 of the sauce mixture and the wings in a container and let sit in refrigerator for at least 3 hours. (for best results leave overnight) Save the remaining 1/2 of sauce mix. Proceed to step 6.
- Method 2: Fry wings slightly in a pan. Use butter for best taste or olive oil for a healthier alternative. You want the outside of the wings to brown slightly but you don't want the wings to cook all the way through. Use medium-high fire. Then put wings in an oven safe container and brush in 1/2 sauce mixture. Proceed to step 6.
- Preheat oven at 400°F and place wings and 1/2 mango sauce in an oven safe dish. Bake for 30 minutes.
- Take wings out after 30 mins. Remove the "juice" released by the Chicken with a spoon.
- Turn wings over. Smother wings with the remaining 1/2 mixture.
- Put back in the oven for about 15-30 mins. Check wings using a fork after 15 minutes. Aim for juicy and tender. The outside should become glazed with the mango sauce.
- Remove from oven and enjoy while still hot. Scoop some of the mango Habanero sauce from the dish on top of the wings if you wish.
